Maple Mustard Pork Roast:

2/3 Cup Maple Syrup
3 Tbsp. Dijon-Style Mustard
2 Tbsp. Cider Vinegar
2 Tbsp. Soy Sauce
2 lbs. Lean Pork Boneless Loin Roast

Stir together maple syrup, mustard vinegar and soy sauce together. Spread evenly over pork roast and place in a shallow pan. Roast in a 365-degree oven until internal temperature reaches 150 degrees (40-90 minutes). Remove from oven and let stand for 5-10 minutes before slicing. Makes 5-7 servings.
